Recipe of the Week: Gnocchi with mushrooms and spinach

As I drove home last Friday night, I thought hungrily about dinner. I didn’t have any plan (very unusual for me), but instead just thought about what was in the fridge.  I concocted this recipe (which is really pretty simple) and thought it was great.

1 lb. gnocchi (I used pesto gnocchi)

1/2 onion, finely chopped

8 oz mushrooms, sliced

1 lb spinach, chopped

pinch of nutmeg

salt & pepper

shredded Asiago, Parmesan, or Romano

1. Cook the gnocchi according to instructions on the package.

2. Meanwhile… Heat a large skillet with a bit of olive oil.  Saute the onion until transparant.

2. Add the mushrooms and a little salt.  Cook until the mushrooms have released their moisture.  Then add the spinach and cook until the greens are wilted but still green.  Sprinkle on the nutmeg.

3. Turn off the heat, add gnocchi and toss until ingredients are well distributed.  Add salt and pepper to taste.  Serve immediately and top with cheese.
